Homemade Blueberry Pancake Surprise!

The more time that I spend in the kitchen, the more I am inspired to cook. This amazes me because just 5 or 6 months ago I barely cooked anything, I was a nuke and take out queen. It is not that I didn't know how to cook but without meal plans I found it difficult to come up with anything to cook. And of course waiting until I was starving to try and figure out something to eat didn't help matters, I just grabbed whatever was easiest.

After using Sparkpeople.com for a couple of months I find myself inspired to try new things. I also have more fresh foods on hand and now I seek out different options for my ingredients, gaining inspiration from recipes I find online.

Yesterday I decided to make pancakes from scratch, I usually purchase pancake mix but after making crepes the other day, I realize how easy it is just to make my own. My family loves blueberry pancakes so I decided to try my hand at a recipe. My son loves pancakes but I have a hard time getting him to eat vegetables so in addition to blueberries I decided to add oats for more fiber.
I used frozen blueberries, applesauce to sweeten, and vanilla for a nice taste. Since I used wheat flour and white flour I added baking powder to ensure a bit of fluffiness. Wheat flour is pretty heavy. I really liked the taste of the pancakes and I topped them with a teaspoon of maple syrup. Depending on your sweet tooth you might want to use sweetened applesauce instead of unsweetened but the maple syrup worked for me.

This is a nice breakfast for the weekend if you don't have time to cook during the week and you can make an entire batch and freeze them and reheat as necessary.

Blueberry Pancake Surprise

Ingredients
1/2 cup whole grain flour 1/2 cup white flour 1/2 cup oatmeal 2 tsp baking powder Dash of salt 1 large egg 2 egg whites .5 cup applesauce 1 cup almond milk (or whatever milk you like) 2 teaspoons vanilla extract 1 cup blueberries(fresh or frozen) Nutritional Info

Mix all of the dry ingredients in a bowl. Add eggs, applesauce, milk, vanilla extract and mix. If using frozen blueberries place in bowl and thaw in microwave, add berries with juices to batter and stir. Spray griddle with non-stick cooking spray and pre-heat. Pour batter onto cooking utensil and cook until bubbles form, flip and cook until done - pancakes should look brown when ready. Enjoy! Each serving is 3 pancakes from 1/2 cup of batter.
